I don’t like wines that are worked: heavily extracted, oaky, manipulated, squeaky clean and boring. I like finesse and elegance, and wines that are full of emotion and personality – a bit like people. For this, the winemaker needs to take a step back, and allow his/her wines to go with the flow of nature.
